    Carminic acid: Carminic acid -C22H20O13- is a red glucosidal hydroxyanthrapurin that occurs naturally in some scale insects, such as the cochineal, Armenian cochineal, and Polish cochineal. The insects produce the acid as a deterrent to predators. An aluminum salt of carminic acid is the coloring agent in carmine. Synonyms are C.I. 75470 and C.I. Natural Red 4. The chemical structure of carminic acid consists of a core anthraquinone structure linked to a glucose sugar unit. Carminic acid was first synthesized in the laboratory by organic chemists in 1991.

    Sitruunahappo: Sitruunahappo on kolmearvoinen orgaaninen happo. Sen kemiallinen kaava on C6H8O7 tai vaihtoehtoisesti CH2-COOH-•COH-COOH-•CH2-COOH-. Sitä esiintyy luonnossa muun muassa sitrushedelmissä. Elintarvikkeista sitruunahapon tunnistaa E-koodista E330. Sitruunahapon muita nimiä ovat 2-hydroksi-1‚2,3-propaanitrikarboksyylihappo ja Acidum Citricum. Sitruunahapon CAS-numero on 77-92-9. Sitruunahappoa vastaava anioni on sitraatti-ioni. Carl Wilhelm Scheele eristi sitruunahappoa sitruunamehusta ensimmäisen kerran 1784. Sitruunahappo on yksi sitruunahappokierron välivaiheista. Se osallistuu täten lähes kaikkien organismien aineenvaihduntaan. Sitruunahapolla on myös kidevedellinen muoto eli sitruunahappomonohydraatti C6H8O7•H2O, jonka CAS-numero on 5949-29-1.
