Guarkumi on kylmään veteen liukeneva polysakkaridi. Elintarvikkeiden lisäaineluettelossa guarkumi kuuluu sakeuttamisaineisiin ja sen E-koodi on E412. Guarkumin CAS-numero on 9000-30-0. Guarkumin tuontia Intiasta EU:hun on valvottu sen jälkeen kun siitä löydettiin dioksiinia.
